It was a rainy, gloomy day today, and that lent itself to a quiet day at home, which was very enjoyable for everyone.   I ventured out once to the grocery store, but that was about it.   While I was out shopping I found Ajax an apron that says- “Mom’s little helper”- I was so excited and couldn’t wait to have him try it on.   At first he wasn’t thrilled about it, till I started cooking and put my apron on, then he reconsidered and happily put it on.

Ajax was also feeling creative and was building playdoh.  He kept saying, mom take a picture of this!  He was very impressed with himself and kept saying, looking at my colors!  Meaning he took all four colors and squished them together into one giant masterpiece.

At dinner tonight I asked Ajax if he wanted to try some Muenster cheese, he of course heard cheese and said yes.  As soon as he tried he said, yum, that’s good Monster cheese!  He then requested several more pieces of monster cheese throughout the course of dinner. lol.

Thanksgiving Parade

Dave and I honestly couldn’t remember the last time either of us went to a Parade.   We both agreed that we were young, but that’s about as far as we got, lol.   Yesterday we took Ajax to Garden City’s SantaLand parade.  It was within walking distance from our home, so we packed up the stroller with snacks and blankets and walked up to get a prime spot.   While we were waiting for the parade to start, Ajax wasn’t really grasping the concept of a “parade” but he had a lot of fun watching to other people and pushing his stroller around.  As soon as the parade came into view, however, all fiddling ended and Ajax was transfixed.  He stood next to me (refusing to sit throughout the entire thing) and just stared for the first half of the parade.  He loved the fire engines and police cars, the motorcycles, and the marching bands.   He of course LOVED the candy that was handed out and ate three small candy canes throughout the parade.   By the end he was pretty wired.

Thanksgiving Round 2

Our second Thanksgiving was spent out at my parent’s home in Brooklyn.   We had the usual crowd out – my aunt Liz, uncle Tom, and cousins, Mike and Ryan, as well as family friends The Wolfs and Carol, and my grandpa V.   There was a ton of excellent food and everyone had a great time.

Ajax actually hijacked Mike as soon as he walked into the house and convinced him to walk down to the barn.  Then from the house we watched Ajax leading Mike behind the barn – to his favorite play area, a sand pit filled with his trucks.  They were down there for quite some time before Mike finally bribed Ajax back into the house.

My mom and I did some shopping on Friday, but we didn’t even leave the house till 10am, while the guys stayed home and worked around the farm.  Ajax had Dave running all over the farm, moving wood and digging holes.  Very busy.  We then headed home Friday, late afternoon, and then were so tired just made breakfast for dinner.  Overall, a good time.

Bath time

Tonight when I was doing the dishes I was listening to Dave giving Ajax a bath.  They were laughing and playing and having a very good time.  About twenty minutes later, however, I heard the nighttime routine of trying to talk Ajax out of the bathtub.   Sometimes we’re successful at talking him out of the tub, other times we’re simply lifting a wet and squirmy child out of cold bathwater.  Who wants to sit in a cold bath?  Well, apparently a two year old doesn’t mind.

Dave then came out of the bathroom and went searching for a diaper and PJs, with a naked Ajax right behind.  “Woman!” Dave shouted, “where’s the diapers?” (this is a running joke between us).  Dave then rounded the corner into the living room, with of course, Ajax on his heels shouting- “Woman! Where’s my diaper?  Woman!”  Dave and I couldn’t stop laughing, though I guess in hindsight maybe we shouldn’t have? Oh well, it was pretty funny.

Baked French Toast

My sister-in-law asked me for this french toast recipe a while back and I totally forgot.  So over the weekend, I was reminded to share.  I love this recipe.  I usually make it when we have lots of people staying over and I don’t want to be stuck in the kitchen making breakfast.  This can be prepared the night before and then just thrown into the oven in the morning!  I don’t remember where I got it… someplace.

  • French Toast:
  • 1 loaf crusty sourdough or french bread (you definitely need a hard crust bread for this recipe, I recommend the sourdough)
  • 8 whole eggs
  • 2 cups milk
  • 1/2 cup heavy whipping cream
  • 3/4 cup sugar (I never use this much sugar I use about 1/4)
  • 2 tbl vanilla
  • Topping: 
  • 1/2 cup all- purpose flour
  • 1/2 cup firmly paced brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 stick cold butter, cut into pieces
  • fresh fruit (optional)

Grease 9×13 inch pan with butter. Tear bread into chunks and evenly distribute in pan.   Mix together eggs, milk, cream, sugar, and vanilla.   Pour evenly over bread.  Cover tightly and store in the fridge several hours or overnight.   In a separate bowl, mix flour, brown sugar, cinnamon, and salt.   Add butter pieces and but into the dry mixture until it resembles fine pebbles (use a knife to mix it up.  If you use a spoon and stir it up it’ll form a paste, which is difficult to spread).  Store in a ziploc in the fridge.   When you’re ready to bake, preheat the oven to 350.  Sprinkle crumb mixture over-top and bake for 45 minutes (or 1 hour for a firmer, less liquid texture).  You could also add fruit before cooking as well.

Thanksgiving Round 1

This weekend we did an early Thanksgiving up north with Dave’s family.   Dave’s sisters were able to come into town, so we headed up as well.  Actually, when Rod was in town Wednesday night to pick up Theresa from the airport, they actually took Ajax back with them up north.   That meant that I had Friday to myself since I had it off.  I actually did lunch and shopping with a friend (child-free) and had a blast.   Dave and I then headed up north Friday night.

Saturday was Thanksgiving and Dara made a feast!   Ajax of course had a ton of fun playing with his aunts and grandparents.  He chased the dogs, went on tractor rides, and went visiting the great-grandmas.   Some family friends also came visiting and brought their grandchildren, ages 5, 3 and 1 1/2.   Ajax played great with them and after they left he went around the house asking where his cousins were?

We came home today, dropping Theresa off at the airport.  Ajax talked the entire way home.  He talked about everything – the other cars, the tractors, and construction.  He also insisted on listening to the Beach Boys all the way home… yes, 4 hours of the Beach Boys.  Fun.

I actually don’t have any pictures to share as I totally forgot my camera.  But I just wanted to share our weekend.  It was great fun.

Ears and Rite Aid

I swung by Rite Aid today to get my face wash.  For some odd reason I can only find my face wash at Rite Aid, I have looked several other places, but none seem to carry it.  Anyways, I picked up two items and went to check out.  Each product retails for $8.99, but Rite Aid was having a sale, buy one get the second 50% and if you spend $10 get $2 in UP rewards.  I was pretty happy with this sale.

The cashier started ringing up the items and when I looked at the price they were ringing up at $2.29 each.  I asked the cashier if that was the correct price or if her machine was broken?  She said that her machine was fine, but that these items were on clearance!   I asked her to wait one moment and then ran (seriously ran) back to the aisle and loaded up.

I bought:  7 Oxy face wash products, retail $8.99/each, totaling $62.93.  After coupons I paid $2.62 and received $2 in UP rewards.  $0.62!!!

I also took Ajax back to the ear specialist today.   Back in September the doctor had prescribed a nasal spray, but about 2 weeks ago Ajax began complaining that his nose was hurting.   I took him off the spray and called the doctor who told me to bring him in.   The doctor said his ears looked fine, his right ear though was a bit cloudy, but not bad.  The doctor said that our insurance company had bumped his prescription to the generic version of the spray, which is known for causing irritation.  The doctor gave me some samples of the name brand stuff where he pulled out the instructions and showed me where it indicated it was safe for two year-olds (I was a little skeptical).

Pizza Baked Spaghetti

I’ve been looking for a pizza spaghetti bake recipe for a while now.  Odd, yes, but true, it must be something about living in the Midwest, I felt I must have such a recipe in my rotation.  I found this recipe while out visiting my parents (I actually stole it from one of my mom’s cook books).   It is awesome.  Dave and Ajax both loved it and it made a ton.   Bonus!

  • 12 oz. uncooked spaghetti (I used whole grain pasta which made me pretend this was healthier than it was)
  • 1 lb Italian pork sausage
  • 2 jars (14 oz) pizza sauce (I thought 2 jars was way too much, so I only used one and a quarter – I had the quarter jar left over from something else.  I think you could get away with 1 jar though) – (Oh, I also just used regular red pasta sauce, nothing fancy)
  • 1 package (6 oz) diced pepperoni (I only used 1/2 a package of pepperoni – cut them in half to make the package last longer)
  • 1 cup ricotta cheese (I used cottage cheese instead)
  • 1/2 cup shredded Parmesan cheese (I only used 1/4 cup cheese because that’s all we had)
  • 2 eggs, beaten
  • 2 cups shredded mozzarella cheese (I used about 1 cup of cheese, not 2)
  • Heat oven to 350. Spray 13×9 inch baking dish with cooking spray.   In dutch oven, cook and drain the pasta as directed (break up the pasta into thirds before adding it to the water).   Use the minimum cook time.  Return spaghetti to dutch oven.
  • Meanwhile, in 10 in skillet, cook sausage (I also added a diced onion to the sausage) over medium heat, till no longer pink and drain.   In dutch oven, toss spaghetti, sausage, pizza sauce, and pepperoni.
  • In medium bowl, mix ricotta and Parmesan cheeses and eggs.  Spoon half the spaghetti mixture into baking dish.  Dollop w/ cheese mixture; spread evenly over top.   Sprinkle with mozzarella cheese.   Top with remaining spaghetti mixture.  Sprinkle with remaining mozzarella cheese.
  • Bake uncovered 30 to 35 min. or till bubbly.

That’s not fair

The other night at dinner we were joking around.  For some reason I now can’t remember what we were discussing.  But Ajax is getting old enough where he will actually add in his thoughts/ideas to our conversation and we always find it so interesting and enjoyable when he contributes.   Anyways, Dave and Ajax began joking, and Dave said, every time you whine I’m going to take away one of your Christmas presents.   Ajax immediately protested, saying Hey, Dad!  We couldn’t believe that Ajax put that together that quickly.  It was hilarious.  Of course, he’s such a quick kid that I’m not sure why it surprised us, but it.

Kroger run … again

The deals on broth were just to good to pass up, so I made Dave and Ajax run with me to Kroger this morning before we went to the park and then grandpa Nader’s house.   Ajax was very well behaved at the store and sat in the cart, which has a small “car” attached to the front end where little kids can sit.  It has a steering wheel and Ajax took his job of driving the cart very seriously.  It was pretty cute.
